This sounds like such a smart twist on classic chicken salad! I love the idea of using Greek yogurt as the creamy base while letting bold flavors like roasted garlic take center stage. Serving it in radicchio cups is also a great touch—it makes the dish feel fresh, light, and perfect for a low-carb lunch or a simple appetizer.

This Light Italian Chicken Salad with Roasted Garlic sounds like the perfect mix of fresh and flavorful! I love the idea of using Greek yogurt as the creamy base instead of mayo—it keeps the salad light while letting the roasted garlic, basil, and roasted red peppers really shine.

This recipe sounds absolutely delicious! I love the idea of using roasted garlic and Greek yogurt instead of mayo to keep it light while still packed with flavor. Serving it in radicchio cups is such a creative and healthy twist too. The combination of basil, roasted red peppers, and Parmesan must give it a really fresh Italian touch. Definitely a recipe I’d want to try—195 calories for something this tasty is a huge bonus!

This recipe sounds like a total flavor glow-up for classic chicken salad. The idea of using Greek yogurt as a creamy base while letting roasted garlic and fresh basil take the spotlight is honestly genius—it keeps things light without sacrificing that rich, comforting taste everyone loves.

This sounds absolutely incredible The roasted garlic + Greek yogurt revelation is chef’s kiss. I love how you turned yogurt into a quiet supporting character instead of the main flavor villain—such a smart move. Serving it in radicchio cups is genius too: fresh, crunchy, and elegant without trying too hard.

The roasted garlic definitely smooths it out. We ate this tonight and no one asked about the yogurt. I think it would of been even better if I had time to chill it a few hours but I was short on time. We are having a heat wave in CA so I roasted the garlic and poached the chicken in foil packets on the BBQ. Thanks for great idea.

I can’t wait to try it. I also grew up a big fan of mayo based salads, and I’m always looking for a lighter option. Another way to mask the flavor of the yogurt is to add a bit of spicy brown mayo to offset the tangy flavor. I also like to add relish or salad cubes to add some sweetness.
