Finishing them in the oven at 350°F keeps everything juicy without overcooking. Simple steps, big results. Definitely trying this method for my next weeknight dinner!

That quick sear locks in flavour and gives you that beautiful golden crust, while the oven finish keeps the inside juicy instead of tough and overcooked. It’s simple, fast, and honestly makes pork chops taste restaurant-quality without much effort. Definitely a method worth saving for busy weeknights!

A good hot sear is the secret—season boldly, let that golden crust form for a full minute per side, then let the oven do the gentle finishing at 350°F. This method locks in juices, keeps the chops tender, and delivers big flavor without overcooking. Simple, fast, and totally weeknight-worthy

The idea that searing meat “locks in moisture” is actually a myth. What searing really does is create that delicious, caramelized crust we all love, thanks to the Maillard reaction. It adds tons of flavor, but it doesn’t prevent moisture loss.

So yes, searing is absolutely worth it for taste, but if you’re aiming for juicier results, focus on shorter cooking times or go for well-marbled cuts with more fat content.

I just wanted to say kudos to you for taking that feedback in stride. Some people get all pissy when someone corrects them. I wish we could all be so open.

She tried it on her grill pan bone in with a savory marinade…I tried it deboned (with my kitchen shears) and with a ginger sauce from target and my husband grilled on the charcoal grill with the grill pan (carcinogens are charcoal problem I know) but anyway… we each grilled it until it looked like it was near burning and finished in a 350 oven for 10-20 min (depending on bone status) my mom and I called each other after both claiming its the best thing we have tried in a while! It’s a fatty cut of meat but the flavor!
