This salad looks so fresh and flavorful! I love fajita flavors in a healthy, easy-to-make salad — perfect for lunch or dinner.

Andie, I made this last night and we loved it! So nice to cook and eat on a stupidly hot day :-) I’ve made many of your recipes and we love them all!

I’ve had this page open on my tablet for a month. We are making it tonight with Costco rotisserie chicken and I can’t wait!!

One of my favorite ways to eat Mexican food! I don’t even miss the tortillas!

This sounds wonderful and hearty :-)

Do you calorie count for these recipes Andie, or is that against your philosophy for healthy eating?
