Feel free to use pizza dough here, but I highly recommend using fresh flatbreads from the deli or bakery section of your local market. Just char them slightly under your broiler and pile them high with bacon salad.

BLTizza

makes 2

4 cups mixed baby greens

1 small tomato, diced

1/2 small red onion, thinly sliced

4 slices bacon, pan fried, drippings reserved for dressing

1/2 cup crumbled feta cheese

1/4 cup maple bacon vinaigrette (recipe below)

2, 8” flatbreads

Gently toss the greens, tomato, onion, crumbled bacon, and feta cheese with the vinaigrette in a large bowl.
